The Best Tex Mex Dip

This recipe is a crowd pleaser. It’s not fancy, original or impressive. It’s delicious and simple and satisfying. While we love a good cheese platter to nibble on between sips of wine, sometimes we just want something we can scoop up with tortilla chips. This dip is always welcome at a party and a great appetizer for taco night! If you’re hosting, make our feta cheese ball and those scallion, black olives and tomatoes will get used up with no waste! With a hearty layer of beans, cool seasoned sour cream and even avocado, it’s been known to show up as the main event for our picky children to devour. (And they happily do!)

Tex Mex Dip

 

1 can refried beans

1 cup sour cream

½ cup mayonnaise

2 tablespoons taco seasoning

1 ripe avocado, smashed with a fork until spreadable

1-2 cups sharp cheddar cheese

1 large or 2 small tomatoes, chopped

1 can black olives, sliced

1 bunch scallion, sliced

tortilla chips for serving

Spread refried beans in an 8×10 serving dish. Carefully spread smashed avocado on top of the beans. Mix together sour cream, mayonnaise and taco seasoning and spread on top of avocado. Sprinkle the cheese on top of the avocado. Next, layer the tomato, black olives, and then the scallion.

Scoop it up with tortilla chips and enjoy!
